We Tried Candice Kumai's Vegan Bakeless Matcha Cheesecake You're Gonna Love It


Any time I successfully recreate a recipe... I get super excited :)

This past week, I went up North to the Upper Peninsula of Michigan for our annual cross country ski trip. We always spend New Years in our cozy cabin. Recently, my brother's girlfriend, Kim started joining us and has wowed us with some pretty incredible vegan recipes. So this trip, I was set on trying a recipe I found on Instagram. Candice Kumai, one of my current favorite wellness authors, posted this recipe. I really wanted to knock Kim's socks off! She just made Candice's vegan Funfetti cake for Thanksgiving... and it was AMAZING!!!!

Easy recipes are my jam! Any time I can create a beautiful and tasty meal or sweet treat easily is a good time... am I right or am I right? Candice is queen of taking green + healthy and turning them into fun and delicious meals and desserts. 

I have been a big fan of matcha tea for a few years now. I drink it just about every morning and really enjoy the ritual. I had never considered it as part of a recipe, until I started following Candice. She has pretty much created just about every thing you can with matcha. So when I saw the vegan bakeless matcha cheesecake recipe, I knew what I was going to recreate for our new year's dessert.

Fear not, this recipe is super easy and perfect for beginners. A special tip from Candice, add an extra bit of lemon juice to the recipe! 

My non-vegan family members loved it! In fact, they loved it so much, I was hoping to have some for breakfast the next morning but it was all gone!! 

This is definitely a recipe I will be adding to my book of favorites here at home.
